During a visit to Arizona, founder Kevin Rink fell in love with the area's Southwestern cuisine and decided to bring it back with him to New York. The company opened its first cafe in the Jefferson Valley Mall in Yorktown Heights, New York. The restaurants serve traditional as well as nontraditional Mexican fare at establishments throughout the East Coast.

Lime has never lost sight of its fresh focus as it expands. All locations have fresh produce delivered daily from local markets and its meats are charbroiled on grills in an exhibition-style kitchen. Guests also have the option of making their meal with whole wheat, multi-grain or low-carb items. Lime's stores are outfitted with Chicago brick and hammered copper countertops, and earth-tone fax-finish walls adorned with custom dark hard wood trim and hanging lime baskets.
