He was an informed traveler and knew what to expect in each of the countries on his itinerary. Even so, Asia's ubiquitous noodle shops surprised him. "I couldn't believe how many there are - countless thousands! And I was amazed at their efficiency - even little mom-and-pop-owned-and-operated noodle restaurants were thriving, humming at all hours".
