A native of New London, Malouf, 34, joined the company about a month after it was founded in 1993. He once managed Breadsmith's first store, on North Downer Avenue, on Milwaukee's east side.
Malouf has served in a variety of roles at Breadsmith, including head of research and development. He was promoted from vice president.
He will oversee the company's daily operations, focus on Breadsmith's strategic direction and help lead the company's managers. The company now has 34 franchises in 10 states, primarily in the Midwest. Breadsmith plans to open its first store in Texas, in McAllen, in June.
The headquarters' staff consists of nine people, Malouf said. He estimates that as many as 450 others make a living through Breadsmith franchises.
"Bread starts with flour, water, yeast and salt," said Malouf, who holds a bachelor's degree in cartography from the University of Wisconsin-Stevens Point. "We're not going to get away from scratch-baking. Whenever you walk into a Breadsmith, whatever you eat, it's made there."
