"I knew from the first moment that I stepped into a Rockin' Baja Lobster restaurant that it would be a great concept for Southern Florida," says Parton. Gibbs currently owns Cocomo's restaurant in Marco Island and Parton recently sold his home improvement company based out of Atlanta, Ga.

The menu also includes an abundant choice of appetizers, palapa taco platters, sizzling fajitas, as well as steak, chicken and chipotle BBQ ribs. Rockin' Baja Lobster also has a highly successful beverage program of buckets of ice cold beer, hand shaken margaritas, specialty crafted cocktails and other unique drinks that account for 25-30% of restaurant sales. All menu items come with their famous Unlimited All You Can East Fresh Salsa Bar along with unlimited Caesar salad, Mexican rice and beans and fresh hot flour tortillas About Rockin' Baja Lobster Rockin' Baja Lobster was created from a family's love of Puerto Nuevo lobster dinners.
