Rockin' Baja Lobster Restaurant and Beach Bar, the San Diego based chain of rockin' fun Baja Mexico-style cantinas continues its nationwide expansion efforts opening two more restaurants in 2006 to make six total restaurants in three states. The popular chain expects to open up to six restaurants in 2007 and venture into new states such as Nevada, Florida, Texas and Louisiana. "2006 was a very strong year for Rockin' Baja Lobster," says Houston Striggow RBL's Vice President of Operations. "We went from a four to a six unit chain and signed several multi-unit franchisees. Our rapid growth is great because it allows more people to come and taste our amazing food and understand what all the buzz is about." Rockin' Baja Lobster has a one of a kind cuisine inspired by the unique cooking style found in Baja coastal village of Puerto Nuevo which highlights spicy, flash fried lobster served with fresh tortillas. Rockin' Baja Lobster takes its own spin on the Baja style by offering over 15 different "signature buckets" such as their Golden Sombrero Bucket filled with Baja style seasonal lobster, King Crab, and jumbo shrimp along with grilled marinated chicken breast, Flat Iron Steak and fresh corn on the cob. The menu also includes an abundant choice of appetizers, palapa taco platters, sizzling fajitas, as well as steak, chicken and chipotle BBQ ribs. Rockin' Baja Lobster currently has four locations in southern California, one in Tucson, Arizona and Humble, Texas. There are over 20 units in development in Louisiana, Mississippi, Alabama California, Florida, Nevada and Texas. About Rockin' Baja Lobster: Rockin' Baja Lobster was created from a family's love of Puerto Nuevo lobster dinners. Joe DiRienzo converted his general grocery store into the first Baja style restaurant and his son Rick DiRienzo has since expanded it to six locations. Restaurants are typically 5,000 6,000 square feet, seat approximately 250 guests including the bar and check averages are $22.00.
