But a new franchising effort is growing the Oklahoma City-based restaurant concept into a Midwestern chain, with 42 new stores in the works.
The original Jimmy's Egg opened 30 years ago at NW 16 and N May Avenue. Founder Loc Le partnered with Jim Burke last year to form Jimmy's Egg Franchise Systems and started opening new Jimmy's Egg locations in Oklahoma and other states.
"We definitely feel like we have a shot at becoming a strong regional chain," said Burke, who is also the former president and CEO of Eateries Inc. and co-founder of the Garfield's Restaurant chain, which was sold to an investment group in 2006.
So far, nine new Jimmy's Egg restaurants have opened. The company announced Thursday a new agreement that covers Lawton, Duncan, Altus and Chickasha.
Other franchisees are developing locations in Omaha, Neb., Springfield, Mo., Houston and Wichita, Kan.
"Every time we open in a new market, we get a series of inquiries of people looking for new franchises," Burke said.
The franchise model is attractive to investors because the company has a successful 30-year history. Startup costs are typically $150,000 to $200,000, but have been as high as $400,000 in one instance, Burke said.
Operators especially like that the restaurants, which serve breakfast and lunch, are open each day from 6 a.m. to 2 p.m.
"The sweetener is: Not only does it work financially, but it works in their personal lives," he added.
