Salad Franchise To Open In March

Salad Creations is coming to the old Rosario's spot at 6001 Monona Drive, which closed this fall after 36 years.

Gary Achenbach hopes to open the salad franchise by mid-March and is making major renovations to the building right now, "tearing it apart and putting it back together." It's Achenbach's first Salad Creations, a national franchise with 33 locations across the country.

There's another one in the Madison area at 610 Junction Road, but it is not owned by Achenbach, who with his wife RoseAnn owned and operated two Subway restaurants in Spring Green and Mazomanie. "I'm aging and my body needs healthier choices," Achenbach said. "I'm doing something good for my body. I think we all need to do that. The grease era is over." Salad Creations is casual fast food with a lot of healthy choices, he said. The menu is available at saladcreations.net. Chefs prepare salads to order from an array of ingredients lined up in front of the customers, who have their choice of "throw-ins." Achenbach lives in Eastman, near Prairie du Chien, and will commute to Monona. He got out of the Subways in 2008 and said he was looking for a better choice � to get away from the bread.

"It's a fresh, good product, so people can feel good about themselves," Achenbach said of Salad Creations. "After they leave, we want them feeling good about themselves on the way out the door."
