Linda Aziz, who is from Malaysia and is one of the partners in the new Hot & Roll franchise at West Ridge Mall, admitted the American Midwest isn't known for cutting edge cuisine, but said the grab-and-go restaurant's first few weeks have been successful.
"It's nice to start something out of the Midwest," she said. "Usually everything starts on the East Coast or West Coast." Hot & Roll serves rolled sandwiches in a wrap that is reminiscent of a crepe, but is more crisp, Aziz said. They also have dessert wraps. Thus far, the top sellers have been pesto pepperoni, curry chicken and mixed berry, she said, and the biggest problem customers have had is figuring out where they are supposed to bite first, since the wrap takes on a shape similar to an ice cream cone.
Lonnie Williams, a Topeka businessman who also is a partner in Hot & Roll, said he thought Topeka would be a good test market before expanding the franchise. He pointed to such successful franchises as Pizza Hut and White Castle that began in the Kansas. Pizza Hut was founded by two brothers from Wichita in 1958 and White Castle started there in the 1920s.
"I figured if it made it here in Topeka, Kansas, it would make it anywhere in the U.S.," he said. "Pizza Hut started in Kansas. Why can't Hot & Roll?"
