Local 19-Year-Old Opens New Cafe; Serves as Community Hub for Eating Healthy

No more waiting in Castle Rock.

Local residents, students and professionals no longer need to agonize about eating healthy when out and about. Vitality Bowls, which specializes in acai bowls - a thick blend of the Amazon's acai berry, rich in antioxidants, topped with a variety of superfoods - today announced the opening of its cafe in Castle Rock. The new location will be the first for 19-year-old Zak Solis, a local who plans to open three additional cafs in the area. 

"From the first bite I took from an açaí bowl at Vitality Bowls, I knew it was the start of a new journey for me," Zak said. A recent graduate of Skyview Academy High School, he's following his culinary passions to open the cafe. "The incredible taste of the fresh ingredients and the feeling it provides is just an unbeatable combination."  The new restaurant slated to open on November 17 will be located at the Promenade at Castle Rock, situated conveniently next to the Castle Rock Outlets. This restaurant will be the second Vitality Bowls cafe in Colorado, accompanying the 26 locations based nationwide.



Originating in Northern California, Vitality Bowls has solidified itself as America's superfood cafe - combining a dynamic cafe atmosphere with a unique collection of menu items which contain high nutritional values and extraordinary tastes. Vitality Bowls offers an antioxidant-rich menu; breakfast, lunch and dinner items made to order for each customer. All açaí bowls and smoothies contain no ingredient fillers such as frozen yogurt, ice, frozen yogurt, added sugar or artificial preservatives, giving the purest taste possible. 


The menu features a variety of options, such as the Energy Bowl (with goji berries, organic açaí, and bee pollen), the Dragon Bowl (featuring coconut milk, organic pitaya and bananas) and their signature Vitality Bowl (with strawberries, organic açaí and honey). The brand also recently announced exclusive additions to their kids menu. Fresh juices, panini, soups and salads are available in each cafe.  The eatery will include a full-service coffee bar, with espresso and superfood drinks that are packed with antioxidant-rich açaí, matcha and pitaya - for example, the Açaí Latte (espresso, açaí, steamed almond milk, coconut sugar) or the Superfood Mocha (CaCoCo, espresso,  superfood chocolate blend, steamed milk). Organic kombucha and organic cold brew nitrogen-poured coffee will be available on-tap.

"Simply put, we created Vitality Bowls to be a place where health-conscious individuals can go for a nutritional meal," Tara Gilad, founder and owner of Vitality Bowls, said. Since launching in 2011, the Vitality Bowls has shown significant growth. In 2014, the concept began franchising. Within the past year has signed development deals for nearly 40 units. There are currently 26 open and operating with additional units in development.
