Brixx Wood Fired Pizza is eyeing additional locations across the U.S.
Expect up to five new stores annually, with a mix of corporate and franchise locations, says Jeff Van Dyke, managing partner for New South Pizza Inc., parent to Brixx."There's definitely continued opportunity out there," he says.
Van Dyke, Eric Horsley and Barbara Bodford-Morgan opened the first Brixx location in Charlotte's Dilworth neighborhood in 1998.The brand now has 34 restaurant in 10 states."We have broad appeal," he says. "It's not a trendy concept. People are going to like pizza and beer for a long time."
Their newest 3,900-square-foot store opens Thursday in Fort Mill's Kingley development."We just thought this was a great opportunity. This is a growing area down here," Van Dyke says.
Josh Beaver with the Nichols Co. represented Brixx, while Kerri Robusto of Clear Springs Development represented the landlord.
The Fort Mill store has a familiar feel, but its own character. This is the only location to have an island bar. There are community tables, a large covered patio and of course, the wood-burning pizza oven is front and center.
"It's almost theater," Van Dyke says of the ability to watch pizzas being fired. He feels the brand has carved out a niche with its laid back vibe but continued focus on good, efficient service. The setting works for a business lunch, date night or a dinner spot for families with kids. It's also open late night.
Brixx's menu features wood-fired pizzas made in a brick oven, sandwiches, salads and pastas as well as vegan and vegetarian options. There's multiple types of pizza dough including whole wheat and gluten-free options. Nearly everything made in scratch. It has just 24 craft beers on tap. That provides variety, but also ensures that beer remains fresh.
"We don't let the menu grow out of control so we can continue to execute it well," Van Dyke says.
Growth plans call for additional corporate stores in the Carolinas as well as franchise locations across the country. There are 13 company stores in Charlotte, Raleigh and Virginia. Each location costs roughly $1 million at the end of the day, factoring in costs to upfit and train.
