Greek Town was the largest and best-known urban community of Greeks in the United States for much of the early twentieth century, and was a large part of the Chicago cultural and culinary experience. It was even the birthplace of the gyro in the US. In the summer of 1980 the idea of then-mayor Jane Byrne, was to bring all of these cultures together in one event known as "The Taste of Chicago." This one-day event has since grown into a must-attend ten-day event located in Grant Park. Popular local food staples at The Taste include Chicago hot dogs, gyros, Italian Beefs, Maxwell Street Polish Sausage, and Greek Salads, all foods that capture the variety and history of the city's cultural diversity. Papa-N-Son's is bringing this Bite of Chicago to towns across America by creating a Chicago-style experience in local neighborhoods with a whole new fast-casual restaurant concept.
