Crescent City, formerly know as Crescent City Beignets, is a specialty chain concept patterned after a traditional New Orleans coffee house, specializing in beignets (pronounced "ben-yay"), the city's famed powder-sugar-dusted doughnuts. Other signature items include sandwiches, jambalaya, salads, gumbos, caf�s au lait, and Creole blue-plate specials inspired by New Orleans and its French Quarter. The Houston-based chain was launched in 1997 by its president, Wayne Bunch. Today there are 16 Crescent City cafes, primarily in Texas, with major expansion plans pending.
