Rockin Baja Lobster Moves Into Florida

Rockin' Baja Lobster Restaurant and Beach Bar, the San Diego based chain of rockin' fun Baja Mexico-style cantinas recently signed a multi-unit franchise deal with David Parton and Scott Gibbs to build five Rockin' Baja Lobster restaurants throughout Charlotte, Collier, Lee, Monroe and Sarasota Counties. Parton and Gibbs plan to open their first restaurant in Naples by summer of 2007.

"I knew from the first moment that I stepped into a Rockin' Baja Lobster restaurant that it would be a great concept for Southern Florida," says Parton. "It is a fresh and unique idea that I know Floridians will enjoy." Parton and Gibbs are seasoned entrepreneurs. Gibbs currently owns Cocomo's restaurant in Marco Island and Parton recently sold his home improvement company based out of Atlanta, Ga.

Rockin' Baja Lobster has a one of a kind cuisine inspired by the unique cooking style found in Baja coastal village of Puerto Nuevo which highlights spicy, flash fried lobster served with fresh tortillas. Rockin' Baja Lobster takes its own spin on the Baja style by offering over 15 different "signature buckets" such as their Golden Sombrero Bucket filled with lobster, King Crab, and jumbo shrimp along with grilled marinated chicken breast and Flat Iron Steak and chicken and calamari steaks all cooked Baja style. The menu also includes an abundant choice of appetizers, palapa taco platters, sizzling fajitas, as well as steak, chicken and chipotle BBQ ribs. Rockin' Baja Lobster also has a highly successful beverage program of buckets of ice cold beer, hand shaken margaritas, specialty crafted cocktails and other unique drinks that account for 25-30% of restaurant sales. All menu items come with their famous Unlimited All You Can East Fresh Salsa Bar along with unlimited Caesar salad, Mexican rice and beans and fresh hot flour tortillas About Rockin' Baja Lobster Rockin' Baja Lobster was created from a family's love of Puerto Nuevo lobster dinners. Rick DiRienzo and his father Joe converted their general grocery store into the first Baja style restaurant. Rockin' Baja Lobsters can now be found in San Diego, Oceanside and Newport Beach CA; Tucson AZ and Houston TZ. Restaurants are typically 4,000 � 6,000 square feet, seat approximately 175 guests including the bar and check averages are $21-24 per person.
