Former St. Louisan and Wash U. grad Tom Coyle (Kirkwood High, Class of 1976) is working to bring the C.O.Jones Mexican Restaurant and Tequila Bar concept to the Lou. Coyle, who is based in Indianapolis with MZD Restaurant and Retail Development, is heading expansion for the New Haven, Conn.-based chain. The chain is considered a "grownup Mexican fast casual" concept and offers more than 75 varieties of premium tequila and 25 margaritas with fresh lemon and lime mixers made on the premises. Expansion efforts also are under way in Raleigh and Charlotte, N.C.
