Immediately after bottling After bottling, leave your wine standing up for several days before placing it on it's side in a rack. This will let any CO2 that might be remaining escape prior to the cork sealing and your long-term storage.
Storage Store your wine in a cool, dark, dry place. A constant temperature between 48 and and 60 degrees is ideal. However, it is better to have a consistent temperature of, say 58 degrees, than fluctuating cooler temperatures. The bottles should be placed in a rack, or they can also be piled on top of each other, however you must ensure that each bottle is stored flat to keep the corks moist. Vibration such as rough handling, running up and down stairs that have wine stored under them, storage near any appliance that runs on and off, i.e. furnace, freezers, water softener can be damaging to your wine.

Serving It is advisable to uncork the wine about 30 minutes prior to its consumption, to let it breathe.
This "decanting" or breathing process enhances the flavour in both red and white wines.
