Gatti's Debuts Fast Casual Concept

Gatti's Pizza has unveiled its new fast casual concept, Gatti's. The first unit opens today in Austin, Texas, with six more in the pipeline for the Texas market.

Gatti's features signature pizzas made from scratch, as well as specialty salads and oven-baked sandwiches. Also, the concept features a separate line of "create your own" pizzas and salads.

The first Gatti's is housed in a 2,400-square-foot space designed by architects Trapp Associates LTD. Balancing contemporary and Old World Italian decor, the store features decorative stained concrete flooring, Mediterranean inspired tile and wall coverings, and marble accents throughout. Wood chairs and butcher block-style tables extend the theme. (Check out photos here).

As guests join the queue, they are partnered with a specially trained artisan who helps them choose from four pizza crust options including Gatti's original crust, thin, whole grain wheat, or gluten free. There are also vegan options.

Additionally, customers can choose from five different proprietary sauces and 29 toppings for a customized pizza. For salads, they have a choice of more than 22 toppings and nine dressings.

Oven-baked sandwiches include bruschetta chicken, kickin' chicken, Tuscan veggie, chicken pesto, Gatti's primo and meatball Alfredo. There is also a kids' pizza available.

"When the first Gatti's Pizza opened some 40 years ago, people traveled from miles away to try our famous pizza," said Michael Mrlik, president, Gatti's Pizza. "Gatti's quickly became known for fresh flavorful pizza that kids and parents have enjoyed and craved for years. We are excited to open our new fast casual concept on Red River and introduce craveable menu items along with our great pizzas in a format that gives our guests many more choices." The Gatti's fast casual concept includes a new logo that reflects the updated and fresh approach to making food more convenient. Additionally, the new unit will use only green compostable, recycled to-go utensils, napkins, cups and bowls, pizza boxes and carryout bags.

Restaurant veteran Jake Buckingham will manage the new restaurant which employs 25 people.
