Mike Hislop is passionate about the food at Corner Bakery Cafe, but as CEO of the 150-unit concept I guess he should be.

Hislop talks of the breakfast Paninis, salads and pastas at the fast casual chain as if he made each one of them himself.

Hislop, who is also chairman and CEO of parent company Il Fornaio, has been with the company for seven years. Il Fornaio bought Corner Bakery from Brinker International Inc. (NYSE: EAT) in early 2006.

But recently, Corner Bakery has ramped up growth, expanding its LBJ Expressway headquarters, announcing plans to grow in Minneapolis and Seattle, and hiring support staff. Hislop plans to double the size of the company in the next three to five years by growing the franchise base, which today consists of 40 stores.
