This is best for a majority of locations as it provides a comfortable atmosphere for customers and moves the focus to the food. At both styles of locations, everything on the menu is made fresh. This means more work, but also an expanded menu and revenue opportunity in your franchise. People want fresh from a Fast Casual, so your design choice is secondary to operations.
