Customer's Steak-out Need Satisfied By Buying Franchise

Saturday, April 25, 2009

When he discovered that Steak-Out was out of Prattville, Andy Nelms bought in.

Advertisement Nelms, a regular Steak-Out customer, was so upset when the restaurant closed in Prattville that he bought the local franchise so he could reopen it.

Nelms ordered food from the chain's Montgomery location near his home regularly, and sometimes enjoyed it from his law office in Prattville. He hasn't given up his law practice, but Steak-Out is taking more of his time than he imagined.

Part of this is because he just couldn't stop at buying just one.

Steak-Out delivers grilled meats -- chicken, steak and burgers -- and puts the same meats in sandwiches and salads.

The Prattville store operated for a few years under a different owner, but Nelms described it as undercapitalized and underperforming. The former owners let the store close, and Nelms swooped in to pick up the property.

He said he could have opened quickly, but instead upgraded the restaurant and its fixtures, hired new employees and expanded the menu.

Steak-Out opened again in Prattville near the end of March with the larger menu and a larger delivery area.

It also expanded its marketing efforts, including sending out door hangers to addresses within its delivery area.

Nelms said he is the sole owner of the restaurant, but he describes the process as a team effort with his new store managers.

"We like the store," he said. "It looked like a wonderful opportunity to us." Sales have boomed, Nelms said. Within a month he expects to generate double the revenue that previous owners had at the store.

That led him to look into other Steak-Out franchises. He just purchased one in Hoover, and Nelms is near a deal to take over a store in Knoxville, Tenn.

Beyond that, he hopes to expand within the local market. When he looks at the region, he sees a world of potential.

"I think Auburn would be a great place for another store," he said. He also said a store would fit in Elmore County, and Montgomery is large enough for more stores.

"Central Alabama is of great importance to us," he said.

While Nelms became familiar with the restaurant as a customer, as owner it took awhile for him to accept at least one menu item.

Steak-Out's Jurassic Burger has a full pound of meat, four slices of cheese and almost a full salad as toppings.

"I thought nobody would order that," he said when he put it on the menu.

His customers have proven him wrong. It is now one of the restaurant's best sellers.
